Spinach and lentil soup is super delicious and healthy food which is rich in protein, fat, carbohydrates, fiber and vitamins. It is easy to prepare in instant pot and is a wholesome meal which can be eaten with rice or bread.
It is a perfect food for new moms and family as it can be prepared with minimum supervision.

INGREDIENTS
- 2 cups yellow or green lentils or any other readily available lentil
- 4 cup chopped spinach fresh or 2 cups frozen spinach
- 1 chopped tomato or ½ cup tomato puree
- ½ teaspoon Turmeric powder
- ½ teaspoon Paprika powder
- 3 teaspoon ghee (clarified butter, available in Indian stores) or olive oil
- Salt to taste
- 3 cups water
INSTRUCTIONS FOR INSTANT POT
- Wash lentils in a large bowl or pot.
- Turn on “Saute” mode on instant pot
- Add 3 teaspoon of ghee or olive oil
- When ghee is melted, add turmeric, paprika and saute for 30-40 secs
- Add tomatoes and a pinch of salt
- Saute for 2 min
- Add spinach and a pinch of salt
- Saute for 2 min
- Add lentils
- Add 3 cups water and salt to taste
- Turn instant pot setting to pressure cooker
- Put on and close the lid
- Set the pressure cook time for 20 min
- After 20 min are done, wait for 10 min for steam to release. Serve hot. It’s best with rice or toasted bread.
- Enjoy!
To reheat, add a splash of water and boil it for 5 min.
